Cajun Honey Parmesan Salmon


This salmon is packed with flavor; sweet, savory, spicy and tangy and is super easy to throw together with these potatoes and green beans!

This was a really great recipe for our family. Quick and packed with a flavor profile that was different than combinations I had tried before.


Thank you, TheCuriousPlate, for this recipe idea 🙏🏼. I'm also sharing modifications to the recipe I made to make it my own.

The main modification was that I microwaved the ingredients of the basting sauce, instead of making it in a skillet. I wanted to taste the texture of the parmesan cheese and I knew that microwaving it would cause lumping and chewiness. Another note is that in the original recipe, information on how to use the lemon juice and parsley was missing so I made sure to include where those ingredients should be added, per my cooking knowledge :). Here is the unofficial, quick recipe to the potatoes you see in the picture. Wash and halve red potatoes. Boil potatoes in salted water. Remove after the potatoes soften and place in a bowl. Preheat oven to 450 degrees Fahranheit. Add any spices you like. It can be as simple as just salt and pepper. I love to add salt, garlic powder and a generous amount of cayenne/chili powder. Add oil -- 1 teaspoon of oil for each potato you make. Toss. Place on a cookies tray and bake for anywhere between 30 minutes to one hour (or more). The longer you bake, the crispier it will be. You've never had potatoes that were so crispy on the outside and soft on the inside. Be warned that these are addictive.

INGREDIENTS:


Filet & Seasoning

  • Two unfrozen salmon filets

  • 1-2 teaspoon cajun seasoning

  • 1 tablespoon olive oil

Basting Sauce

  • 1 tablespoon butter

  • 1 teaspoon cajun seasoning

  • 1 teaspoon crushed garlic (preferably fresh)

  • 1 tablespoon grated parmesan cheese

  • 1 teaspoon honey

Acid & Garnish

  • 1 tablespoon lemon juice

  • 1 tablespoon chopped parsley


PROCESS:

  1. Make sure the salmon is at room temperature.

  2. Preheat the oven to 400 degrees.

  3. Place salmon on a cookie tray and the pat the salmon dry. After that, drizzle the salmon with olive oil and then sprinkle the cajun seasoning on. Once the oven is ready, put the salmon in the oven and bake for 6-7 minutes.

  4. While the salmon is pre baking, prepare the basting sauce by putting all ingredients in a microwaveable bowl and zapping it for 30 secs in the microwave. Take out and stir. The parmesan cheese will become a little lumpy; that's fine. It adds to the texture.

  5. One the salmon is done pre baking, take out the salmon and add the basting sauce on the salmon with a spoon, making sure the parmesan lumps are evenly spread out.

  6. Put the salmon back in the oven and bake for 10 more minutes.

  7. Prepare the lemon juice and parsley mix.

  8. Once the salmon is out, spoon and sprinkle the lemon parsley mix on the salmon filets.

  9. Serve with sides of your choice.
