Tater Tots N Egg

This was one of those meals that was born because of kitchen ingredient substitutions and I lucked out! I was aiming for a potato and egg casserole. I had no regular potatoes or hash browns. The eggs had been beaten, guests were on their way and I had to make it happen.


As I stared at the freezer, my eyes fell on the Tater Tots and I decided to go for it.


It turned out great. I posted about it on my then active instagram account. Then just recently, a friend of mine mentioned how it had become a part of their meal repertoire because of it's convenience factor so I thought I would put it up here!

INGREDIENTS:

  • 1 bag of frozen tater tots

  • 5-6 eggs

  • 1/2 cups chopped onions

  • 1/4-1/3 cup shredded cheese

  • 1/2 tsp chopped Thai chili, optional

  • salt

  • ground pepper

  • cilantro (optional)

  • 3 tablespoons


PROCESS:

  1. Preheat over to 450 F.

  2. Spray the bottom of a 9 x 13 inch baking pan.

  3. Beat eggs and add onions, shredded cheese, Thai chili, salt, pepper and cilantro, if adding.

  4. Layer the bottom with frozen tater tots.

  5. Pour the egg mixture over the tater tots. Bake for 30 minutes and enjoy!
