Like many, I just love a good avocado toast so I was very excited to discover two avocados in the refrigerator that I had forgotten about. Then I remembered. They were 3 weeks old. Soft as a moft (a trademark of our family is to use rhyming nonsense words to make up similes and they always somehow capture the sentiment 😜).
It felt gross and I was seriously contemplating the trash while feeling ridiculously guilty about being wasteful. So I cut one of them.
I was NOT expecting it to be as perfect as it was. I had no idea avocados kept so well in the refrigerator.
I have one more thing to look forward to and one more anecdote to add to my life’s toolkit of “what something feels like can be totally opposite to what it actually IS” 😊

Ingredients
Sour Dough
Slice Ripe Avocado
Thinly slice onions
Thinly sliced thai chilli
Pinch of cumin
lime juice
salt
PROCESS:
Toast the sourdough slice so it's slightly crunchy. Let cool slightly before applying the avocado.
Scoop out the avocado (check out Andrew Zimmern's video on how to cut an avocado in case you are curious) and spread it like butter.
Add the sliced onions and thai chillis.
Squeeze a few drops of lime juice all over.
Sprinkle with pinch of cumin and salt.
Enjoy as is or add a poached egg!
